Sweet and Sour Zucchini
Makes approximately 2 litres (9 cups)

| 1.75 litres | zucchini, thinly sliced | 7 cups |
| 125 mL | honey | ½ cup |
| 125 mL | white wine vineger | ½ cup |
| 75 mL | vegetable oil | ⅓ cup |
| 60 mL | green bell pepper, chopped | ¼ cup |
| 60 mL | celery, diced | ¼ cup |
| 15 mL | onion, chopped | 1 tbsp. |
| 5 mL | salt | 1 tsp. |
| 5 mL | black pepper | 1 tsp. |
- Combine zucchini, honey, vinegar, oil, bell pepper, celery, onion, salt and black pepper in large glass or ceramic bowl. Cover and refrigerate overnight.
- Drain and serve chilled or at room temperature.
Note: Honey is a safe and wholesome food for adults and children, but it should not be fed to infants less than a year old.
